Tonight’s dinner inspo!

A pizza party where veggies are the star! Such a fun way to sneak in those healthy bites. 😉

Ingredients:

Your favourite pizza dough
pizza sauce
mozzarella cheese
veggie toppings (e.g., red peppers, tomatoes, fresh herbs)

Directions:

Preheat your oven to 450°F and place a pizza stone inside to heat up. Roll or stretch your pizza dough into a fun shape on parchment paper. Spread pizza sauce over the dough. Sprinkle mozzarella cheese and let the kids create designs with the veggie toppings. Transfer the pizza (on the parchment paper) to the pre-heated pizza stone and bake for 8-10 minutes until the cheese is bubbly and the crust is golden. Let the pizza cool for a few minutes, then slice and enjoy!

Combining the calling of spring and family time at Spring Break with some educational tips! 🌎

1. Plant a garden together - Start with easy-to-grow vegetables or flowers, explaining how they help the environment and provide food for wildlife and bees.

2. Take a nature walk - Encourage them to observe the changes in the environment as the seasons change.

3. Learn about recycling - Set up a family recycling challenge, teaching your kids how to sort items and explain how recycling helps to reduce pollution.

4. Visit a local farm - Take a trip to a local farm, botanical garden, or eco-friendly business where you can learn about sustainable practices.

5. Do an eco-friendly craft - Make bird feeders from pinecones, crafting planters out of old cans and painting with natural pigments.

LWhat do you do when you have too many bell pepper

LWhat do you do when you have too many bell peppers in your fridge? Stuff them of course! 🤤

Italian Stuffed Peppers

Ingredients:

4 large bell peppers in different colours, halved
1 lb (450g) ground beef or Italian sausage
1 cup cooked white or brown rice
1 small onion, finely chopped
2 garlic cloves, minced
1½ cups marinara sauce (store-bought or homemade)
1 tsp Italian seasoning
½ tsp crushed red pepper flakes (optional)
salt and black pepper to taste
1 cup mozzarella cheese, shredded
½ cup parmesan cheese, grated
fresh basil or parsley, chopped (for garnish)

Directions:

Preheat the oven to 400°F (200°C). Slice the bell peppers in half lengthwise and remove seeds and membranes. Lightly salt the insides and bake, cut-side up in a baking dish for 15 minutes. In a skillet, brown the ground beef and/or sausage, then add onion and garlic until softened. Stir in marinara, Italian seasoning, red pepper flakes (if using), salt, and pepper. Cook for 2-3 minutes, then mix in the cooked rice. Spoon the filling into each pepper half and top with mozzarella and parmesan. Cover with foil and bake for 20 minutes, then uncover and bake for another 15 minutes until the cheese is melted and bubbly. Garnish with basil or parsley before serving.
