Fresh Veggie Salad
Always love a fresh salad. @_bcgreenhouse tomatoes, cucumbers, yellow peppers over arugula. Topped with pita chips, feta cheese, thinly sliced red onions, basil, and a delicious pomegranate molasses dressing.
Chop up tomatoes, cucumbers, peppers and feta into bite sized pieces. Thinly slice onions and shred basil. Top with pita chips and pomegranate molasses dressing.
3 tbsp pomegranate molasses
2 tbsp red wine vinegar
1 tbsp Dijon mustard (or English mustard, not hot)
1 tbsp honey (or 2 tsp sugar, any)
2/3 cup olive oil
1/2 tsp salt + pepper
Place all ingredients in a jar and shake well. Adjust salt and pepper to taste.
Store for 3+ weeks in the fridge in an airtight container.
