Cucumber Sandwich Cake
A delicious way to impress guests with fresh veggies!
12 slices of sandwich bread
1 cup Ricotta
1 cup sour cream (low fat)
2 cucumbers finely chopped
A few cucumber slices to decorate
Honey 2 tablespoons
A pinch of Nutmeg
Mix all the ingredients together and layer the bread with the filling till it reaches a height of 4 inches.
Cover all four sides just the way you ice your Cake and decorate with fresh herbs and veggies.
