Roasted Cherry Tomato, Olive and Halloumi Pizza

1 shell pizza dough
1/2 cup olive tapenade
1 basket cherry tomatoes, halved, roasted and drained on a paper towel
Salt and pepper
10 slices halloumi cheese, or enough to cover in one layer
1/2 cup Parmesan cheese, grated
Fresh basil or oregano to sprinkle on top

Make or buy fresh pizza dough.
Roast the cherry tomatoes drizzled in olive oil and sprinkled with salt and pepper for 10-15 minutes on a cookie sheet at 400 degrees or until they split. Remove to cool. Stretch dough into the desired shape on a cookie sheet or pizza stone.
Increase heat to 500 degrees.
Spread olive tapenade on dough and top with sliced halloumi. Sprinkle the roasted tomatoes evenly over the dough and finish with grated Parmesan cheese.
Bake for 10-12 minutes or until the topping is bubbling and the crust browned.
Remove and serve!
